Homemade Snacks for a Super Bowl Sunday Celebration

Prepare for a Super Bowl party by making spicy and addictive Buffalo Chicken Breasts with Ranch Dressing that any sports fanatic will adore.

Deep-fried chicken cooked in a spicy sauce, buffalo chicken wings were invented in 1964 in a bar in Buffalo, New York. Over the years, these addictive snacks have been served at numerous sporting events and enjoyed by men and women alike. Buffalo chicken is now a signature bar menu item, and they make an ideal snack for informal parties. If you're planning to have guests over to watch the largest sporting event on television, the Super Bowl, buffalo chicken will certainly appease the appetites of hungry sports fans.

If you're hosting a Super Bowl party, you can bring the flavors of the sports bar home to your kitchen. While buffalo wings are traditional, in the recipe below, we used chicken breasts, in place of the wings. Serve the spicy chicken with an accompaniment of ranch dressing and celery sticks. Don't forget to have a variety of beverages, both alcoholic and non-alcoholic, on hand to tame the bold, spicy flavor of the chicken breasts. Keep beverages cold by chilling them in buckets filled with crushed ice.

RECIPES

Buffalo Chicken Breasts

Serves 2 to 4

Ingredients:

  • 1/2 cup vegetable oil
  • 4 boneless, skinless chicken breasts, cut into three pieces
  • 3 tablespoons unsalted butter
  • 1 cup Frank's RedHot Sauce
  • 1 teaspoon Tabasco sauce
  • 1/2 teaspoon caynenne pepper
  • Ranch Dressing (recipe follows)
  • Celery sticks

Directions:

  1. Heat the oil in a medium stockpot over medium-high heat. Line a baking sheet with parchment paper; set aside. Add half of the chicken breast pieces to the oil and fry until golden brown, about 15 to 25 minutes. Transfer to prepared baking sheets to drain.
  2. While chicken is cooking, melt butter in a small saucepan over medium heat. Add hot sauce, Tabasco and cayenne pepper. Cook, stirring occasionally, until hot. Lower heat and keep warm until ready to use.
  3. When the first batch of chicken breasts is finished cooking, transfer to an airtight container. Add half the sauce and cover tightly. Shake the container to fully coat the chicken. Repeat with remaining chicken breasts and sauce. Serve immediately with ranch dressing and celery sticks on the side. Refrigerate leftovers tightly wrapped in aluminum foil or store in an airtight container in the refrigerator.

Ranch Dressing

Makes 2 1/2 cups

Ingredients:

  • 1/2 cup mayonnaise
  • 1 cup sour cream
  • 3/4 cup buttermilk
  • 1 tablespoon finely chopped onion
  • 1 teaspoon finely chopped garlic
  • Coarse salt and freshly ground black pepper

Directions:

In a small bowl, stir together all the ingredients to combine evenly. Refrigerate any unused dressing in an airtight container.
